Tropical Fruit Smoothie – Yield: 4 Servings

Ingredients

  • 2 cups ripe papaya, cubed (about 1 papaya)

  • 2 cups ripe mango, cubed (about 2 medium mangoes)

  • 4 passionfruits

  • 1 ½ cups plain yogurt

  • ¾ cup apple juice

  • 1 cup ice

Instructions

  1. Cut the passionfruit in half and scoop out the pulp. 

  2. In a blender, add papaya, mango, yogurt, apple juice, and ice. Blend until smooth. 

  3. Add passionfruit pulp and pulse 3-4 times. 

  4. Serve and enjoy!

Cherry Plum Crisp – Yield: 6 Servings

Ingredients

Filling

  • 3 cups plums, sliced

  • 3 cups cherries, pitted

  • 2 tbsp cornstarch

  • ⅓ cup brown sugar

  • 1 tsp vanilla extract

  • ¼ tsp cinnamon

Topping

  • 1 cup rolled oats

  • ¾ cup all-purpose flour

  • ⅓ cup brown sugar

  • 6 tbsp butter, cold and cubed

  • ½ tsp cinnamon

  • ¼ tsp salt

Instructions

  1. Preheat oven to 375°F.

  2. Start with the filling. In a bowl, mix together cherries, plums, cornstarch, brown sugar, cinnamon, and vanilla. Transfer filling into an 8-inch baking dish. 

  3. In a bowl, combine oats, flour, sugar, cinnamon, and salt. 

  4. Cut butter into the mixture until it starts to crumble. Sprinkle over filling.

  5. Bake in the oven for 35-40 minutes until golden. Let cool for 15 minutes. 

  6. Serve by itself or with ice cream!

Mango-Papaya Salsa – Yield: 4 Servings

Ingredients 

  • 1 cup diced mango

  • 1 cup diced papaya

  • ½ cup diced red onion

  • Juice of 1 lime

  • 1 tbsp cilantro, chopped

  • ¼ tsp salt

  • Pinch of pepper (optional)

Instructions

  1. Combine papaya, mango, onion, and cilantro in a bowl.

  2. Add lime juice, salt, and pepper. Toss gently and chill for 30 minutes. 

  3. Serve as a side or with tortilla chips!

Mango Passionfruit Sorbet – Yield: 6 Servings

Ingredients

  • 3 cups frozen mango chunks

  • Pulp from 5 passionsfruits

  • 2 tbsp honey 

  • 2 tbsp lime juice

  • ¼ cup water

Instructions

  1. Using a food processor, add all ingredients and process until smooth and creamy. 

  2. Freeze for 2 hours for a firmer sorbet or serve immediately as soft sorbet!

Cherry & Plum Compote – Yield: 4 Servings 

Ingredients

  • 2 cups cherries, pitted 

  • 2 cups plums, diced

  • 2 tbsp maple syrup

  • ¼ cup water

  • 1 tsp lemon juice

  • Pinch of salt

Instructions

  1. In a saucepan over medium heat, add cherries, plums, syrup, water, lemon juice, and salt. Bring to a simmer and cook for 15 minutes, stirring occasionally.

  2. Let cool for 10 minutes and serve! Refrigerate for up to 5 days.

Mango Passionfruit Chicken Skillet – Yield: 4 Servings

Ingredients

Chicken

  • 1.5lb chicken breasts or thighs

  • 1 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

Sauce

  • 1 cup mango, diced

  • Pulp from 3 passionfruits

  • ½ cup chicken broth

  • 1 tbsp lime juice

  • 1 tsp honey

  • ½ tsp garlic powder

Instructions

  1. Season the chicken with garlic powder, salt, and pepper. 

  2. In a pan over medium heat, add olive oil and sear chicken for 6 minutes per side until cooked.

  3. Using the same pan, add mango, broth, passionfruit, lime juice, and garlic powder to make the sauce. Simmer for 5-7 minutes, stirring occasionally. 

  4. Return chicken to the pan and simmer for 6-8 minutes. Sauce should have a thicker consistency. 

  5. Serve by itself or with a side!

Cherry & Plum Ground Turkey Skillet – Yield: 4 Servings

Ingredients

Turkey

  • 1lb ground turkey

  • 1 tbsp olive oil

  • ½ tsp garlic powder

  • ¼ tsp black pepper

Sauce

  • 1 cup plums, sliced

  • 1 cup pitted cherries, halved

  • ¼ cup water

  • 2 tbsp balsamic vinegar

  • 1 tsp maple syrup

  • ½ tsp garlic powder

Instructions

  1. Add olive oil to a pan over medium heat. Add ground turkey and season with garlic powder and pepper. Cook for roughly 7 minutes until fully browned.

  2. Add plums, cherries, water, and balsamic vinegar to the pan. Stir and cook for 8-10 minutes until the fruit softens. 

  3. Add honey. Mix the turkey fully into the sauce and simmer for 2 minutes. 

  4. Serve with rice or potatoes and enjoy!
