Apple Pie Overnight Oats

Ingredients

  • ½ apple, diced

  • ½ cup rolled oats

  • ½ milk

  • ¼ cup greek yogurt

  • 1 tbsp peanut butter

  • ½ teaspoon cinnamon

Instructions

  1. In a jar or bowl, mix the apple, oats, milk, yogurt, and cinnamon together. 

  2. Add a layer of peanut butter over the oats. 

  3. Cover and refrigerate overnight. Stir and enjoy!

Apple & Hot Honey Grilled Cheese

Ingredients

  • 2 slices sourdough bread

  • 2-4 slices sharp cheddar cheese (to taste)

  • 1 apple, sliced thin

  • Butter

  • Hot honey

Instructions

  1. Butter one side of both slices of bread and place bread butter-side-down in a skillet over medium heat. Remove once toasted.

  2. On the toasted side, layer cheese and apple slices in between. 

  3. Place the sandwich in the pan and toast until the cheese is melted. 

  4. Drizzle with hot honey and enjoy!

Apple Cider Braised Chicken

Ingredients

  • 4 bone-in chicken thighs

  • 2 honeycrisp or granny smith apples, sliced

  • 1 cup apple cider

  • 1 onion, sliced

  • ½ cup chicken broth

  • 3 cloves garlic, smashed

  • 3 sprigs fresh thyme or 1tsp dried

  • 1 tbsp olive oil

  • Seasonings to taste

Instructions

  1. Season chicken with desired seasonings like salt and pepper. 

  2. Heat olive oil in a pan over medium-high heat skin-side down until golden brown, about 6 minutes. Flip over and continue cooking 2 more minutes before removing chicken from the pan.

  3. In the same pan, add garlic, onion, and apple slices. Cook until softened.

  4. Pour in chicken broth and apple cider, then add thyme.

  5. Place the chicken back into the pan, reducing heat. Cover and let simmer for 30 minutes, ensuring the chicken is thoroughly cooked.

  6. Serve and enjoy!

Apple Walnut Goat Cheese Salad

Ingredients

  • 2 cups mixed greens 

  • 1 gala apple, thinly sliced

  • ¼ cup crumbled goat cheese

  • ¼ cup toasted walnuts

  • 2 tbsp dried cranberries

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tsp maple syrup

  • 1 tsp dijon mustard

  • Seasonings to taste

Instructions

  1. In a bowl, whisk together olive oil, apple cider vinegar, syrup, mustard and seasonings to create the dressing.

  2. In a separate bowl, combine mixed greens, apple slices, cranberries and walnuts. 

  3. Drizzle dressing over combined greens and top with goat cheese.

  4. Serve cold and enjoy!
