Lettuce Make a Salad!

Spinach and Blueberry Salad | Yields: 2 Salads
Ingredients
Salad
2 cups baby spinach
2 cups of romaine or arugula (your preference!)
¼ cup of fresh blueberries
¼ cup diced cucumber
¼ cup crumbled feta cheese
¼ cup dried cranberries
¼ cup sliced almonds
Dressing
1 ½ Tbsp olive oil
½ tsp Dijon mustard
½ Tbsp orange juice
½ Tbsp lemon juice
½ Tbsp orange zest
½ Tbsp lemon zest
Instructions
Combine Base Ingredients: Add spinach and arugula or romaine to a mixing bowl. Scatter in blueberries, diced cucumber, diced avocado, sliced almonds, and feta cheese.
In a blender or food processor, blend together dressing ingredients.
Drizzle the citrus dressing over the salad and toss until all ingredients are evenly coated. Add salt and pepper to taste.
Serve and enjoy!
Grilled Romaine Wedge Salad | Yields: 4 Servings
Ingredients
4 stalks of romaine lettuce, halved lengthwise (8 total)
4 slices of cooked bacon, crumbled
2 cooked and seasoned chicken breasts (optional)
1 cup halved cherry tomatoes
½ cup breadcrumbs
1 clove minced garlic
¼ cup crumpled cheese – blue or feta
Olive oil
¼ cup ranch, caesar, or avocado dressing
1 Tbsp butter
2 Tbsp fresh chives, chopped
Salt and pepper to taste
Instructions
Preheat the grill on medium to high heat. Start by cooking the bacon until crispy, then crumble and set aside. If adding, cook the chicken breast as well and let it rest for 5 minutes.
Brush and coat the flat side of the romaine with olive oil, sprinkling on salt and pepper.
Place the romaine with the cut side facing down to grill the lettuce and reduce the heat to medium (1-2 minutes). Flip to grill the other side of the lettuce for 1 minute then remove from the grill.
Place wedges on a tray and drizzle with dressing. Top with bacon crumbs, tomatoes, cheese, and chives. Lay sliced chicken breast on top – make sure to cut against the grain. Sprinkle with breadcrumbs.

Spring Mix Salad | Yields: 4 Servings
Ingredients
Salad
¾ cup or 6oz spring mix
½ thinly sliced red onion
1 cup halved cherry tomatoes
½ cup crumbled feta cheese
⅓ cup shredded carrot (about 1 medium carrot)
3 sliced radishes
1 sliced cucumber
½ cup nuts or seeds (sunflower, pumpkin, almonds, walnuts)
Dressing
2 Tbsp lemon juice
3 Tbsp balsamic vinegar
¼ cup olive oil
1 clove minced garlic
1 tsp salt
½ tsp black pepper
Instructions
In a large mixing bowl, combine spring mix, red onion, cherry tomatoes, feta cheese, carrots, radishes, cucumber, and seeds.
In a small bowl, whisk together lemon juice, balsamic vinegar, olive oil, garlic, salt, and pepper. Drizzle over salad base once ingredients are evenly combined.
Toss salad and garnish with seeds and feta.
Serve cold and enjoy!
